Today I decided to make Banana Pancakes for breakfast and I wanted to share this easy recipe with you! So I’m hoping you like it and make it because I swear it’s easy, delicious and good for you.
This recipe is to make 8 small banana pancakes approximately.
- 2 large bananas
- 2 eggs
- 1/8 teaspoon of baking powder
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon powder
- Pinch of salt
Step 1 – Slice the bananas into small pieces and mash them using a fork until smooth and no lumps remain.
Step 2 – Add the baking powder which will help the pancakes to become fluffier, along with the vanilla extract and cinnamon.
Step 3 – Whisk the eggs in a separate bowl until they get very liquid. Then pour the eggs into the main mix and stir well until completely mixed.
Step 4 – Use a non-sticky pan over medium heat and add butter or oil. Drop about 2 tablespoons of batter onto the hot pan. Make sure it sizzles immediately, otherwise turn up the heat a little bit.
Step 5 – Cook the pancakes for about a minute or two until they turn brownish. Then flip them to the other side. Extras: If you want to go the extra mile, before flipping, you can add chunky toppings such as blueberries, nuts, chocolate chips, chia seeds, etc. This is totally up to you 😉
Step 6 – Serve the pancakes and add your favourite syrup, I always choose honey. You can also have them with fruits. Today I had some clementine and prunes, so why not.
