Hello again everyone!
I am so pleased to share with you a recipe a friend of mine taught me – not so long ago – that I’ve been enjoying for the past few days: fruity flapjacks. They are incredibly tasty and super healthy.
Almost everyone love snacking during the day and most people snack bad things such as crisps and chocolate bars, and yes, I am the first one to raise my hand because I’ve been there, choosing bad things to calm the hunger. But I have to admit that along the years, I have also learnt what my bodies needs and what is good to increase my energy in the long-term.
Anyhow, jumping to the point, let me share the recipe and easy steps to make these ultra healthy fruity flapjacks. The ingredients you need to make approximately 20 portions are the following:
- 450g porridge oats
- 275g butter
- 200g honey
- 150g dried prunes
- 150g dried, chopped apricots
- 150g mulled flaxseed (sunflower, pumpkin, sesame seeds)
- 110g light brown sugar
- 30g chia seeds
- 1 teaspoon of vanilla extract
- 1 teaspoon of almond extract
The preparation is so simple. You only need to find the biggest bowl you have at home and pre-heat your oven to 150C/gas mark to get started:
Place the porridge oats into the massive bowl, followed by the other dry items – the sugar and flaxseed. Stir together until mixed.
Use a blender to blend and mix the apricots and prunes. Then add them to the oats and stir until mixed.
Melt the butter and honey and pour them into the main bowl, along with the vanilla and almond extract. Now the heavy stirring starts 🙂

Once you have all the ingredients perfectly mixed. It’s time to place the dough into a baking tray covered with baking paper. Now, you have to spread it in a rectangular shape and press down well.
Use a knife to cut the pieces you like. I opted for square shapes because it gave me 20 pieces. But you can do rectangular shapes as well. If you wanna go crazy – sprinkle some chocolate pieces on top, but try to use baking chocolate, otherwise it may not melt properly haha!
At this stage, the oven should be preheated so now you can place the tray inside and bake for 25 minutes. When the time is up leave the mix to cool down. Now, you can start eating them and packing them up for the rest of the week 🙂
These flapjacks should last up to 8 days, if they are packed correctly and placed in a cool dry place. I really hope you have enjoyed this recipe and get yourself started because it wont’t disappoint you!
